Strawberry Beet Smoothie Bowl Recipe

This strawberry beet smoothie bowl is bright, creamy, and naturally beautiful, with a deep pink color from fresh or frozen beets and strawberries. It is an easy way to enjoy more vegetables in a sweet, refreshing breakfast or snack. Beets blend surprisingly well with strawberry, zucchini, banana, plant-based milk, and vanilla protein powder, creating a thick smoothie bowl that tastes smooth and fruity while still offering plenty of nourishment. This vegan smoothie bowl is high in protein, high in fibre, and ready in just 5 minutes.

Vegetable-Based Smoothie Bowls

Vegetable-based smoothie bowls are a simple way to add more produce to your day without making a complicated meal. While spinach and kale are common smoothie ingredients, they are not the only vegetables that work well. Mild vegetables such as zucchini and beets can blend into smoothies beautifully, especially when paired with frozen fruit and a good vanilla protein powder.

Vanilla protein powder helps create sweetness, creaminess, and a more satisfying texture. Once it is blended with plant-based milk and frozen fruit, you can often add more vegetables than you might expect. In this strawberry beet smoothie bowl, zucchini adds bulk and creaminess without a strong flavor, while beet adds color, earthy sweetness, and a smooth texture when blended well.

Berries are one of the easiest fruits to use in smoothies because they bring bright flavor and natural sweetness. Strawberries, blueberries, and raspberries are all excellent options for smoothie bowls. They are also generally lower in sugar than many other fruits and contain antioxidants, vitamins, and minerals. Frozen berries are especially useful because they help make the smoothie thick, cold, and spoonable, which is exactly what you want in a smoothie bowl.

How to Use Beets in Smoothies

Beets can be used in smoothies in several easy ways. The best option depends on what you already have in your kitchen and how strong your blender is. A high-powered blender will give the smoothest result, especially if you are using raw or frozen beet pieces.

  • Fresh raw grated beet – Finely grated raw beet blends more easily than large chunks. Grate the beet and add it directly to the blender, or store it in the fridge to use in smoothies and salads throughout the week.
  • Cooked chopped beet – If you already have cooked beets in the fridge, add them straight to the blender with the other smoothie ingredients. Cooked beets blend smoothly and create a softer, sweeter flavor.
  • Frozen chopped beet – Frozen beet is a convenient option for thick smoothie bowls. You can freeze cooked beets or raw beet chunks. Raw frozen beet pieces work well in a strong blender and help keep the smoothie cold and creamy.

Smoothie Bowl Topping Ideas

One of the best parts of making a strawberry beet smoothie bowl is adding toppings. Since the base is thick and creamy, toppings add contrast and make the bowl feel more complete. Start with something crunchy, then add fresh fruit, seeds, or a spoonful of nut or seed butter.

For crunch, try chopped nuts, seeds, coconut flakes, granola, cereal, or cacao nibs. For freshness, sliced banana, kiwi, blueberries, raspberries, or strawberries all work well. Dried fruit such as chopped dates can add extra sweetness and a chewy texture. A spoonful of almond butter or another favorite nut butter makes the bowl richer and more satisfying.

This vegan strawberry beet smoothie bowl is thick enough to eat with a spoon and naturally sweet from strawberries and banana. It is packed with fibre, protein, antioxidants, vitamins, and minerals from the combination of fruit, vegetables, plant-based milk, and protein powder. It works well as a quick breakfast, a post-workout snack, or a cooling meal option during warm weather when you do not want to cook.

If you prefer a drinkable smoothie instead of a bowl, simply add more plant-based milk a little at a time until the mixture reaches your desired consistency. Keep it thick for a spoonable smoothie bowl, or thin it out and pour it into a glass.

  • 1/2 cup fresh or frozen chopped zucchini, 75 g
  • 1 cup plant-based milk of choice, 250 mL
  • 1/2 frozen banana, 60 g

Topping Ideas

  • fresh fruit such as sliced kiwi, banana, blueberries, or raspberries

Notes

Use a tamper if your blender has one, pressing the ingredients down gently while blending on low. If your blender does not have a tamper, stop as needed to scrape and stir the mixture so it blends evenly. Avoid blending for too long, as the heat from the blender can melt the smoothie and make it thinner.
To turn this smoothie bowl into a drinkable smoothie, slowly add more plant-based milk until it reaches your preferred consistency.
