Chocolate Chip Cookie Dough Brownies Recipe

These Cookie Dough Brownies deserve a permanent place among the most irresistible baking recipes. The idea came from a craving for the classic combination of vanilla ice cream, brownie pieces, and cookie dough. Instead of making ice cream, the same delicious mix of flavors became a tray of rich, moist brownies topped with soft chocolate chip cookie dough. The result is indulgent, comforting, and exactly the kind of dessert that makes chocolate lovers very happy.

What makes these chocolate chip cookie dough brownies so special is the contrast between the fudgy brownie base and the creamy cookie dough topping. The brownies are baked first until they are moist and chocolatey, then completely cooled before the topping is added. The cookie dough layer is not baked; it stays soft, sweet, and full of small pieces of dark chocolate. It tastes like sneaking a spoonful from the mixing bowl, only better because it sits on top of a homemade brownie.

The cookie dough topping is made without eggs, so it is perfect for this no-bake layer. It can also be enjoyed on its own, spooned over desserts, or stirred into homemade cookie dough ice cream. If you are a true cookie dough fan, you may even want to make a little extra topping. The recipe amount is already generous, but a thicker layer turns these brownies into an even more decadent treat.

At first, spreading raw cookie dough over a baked brownie may feel unusual, but the final result is wonderfully convincing. After a short time in the refrigerator, the topping firms up just enough to slice neatly while still keeping its creamy cookie dough texture. These Cookie Dough Brownies are rich, sweet, and deeply chocolatey, making them ideal for birthdays, dessert tables, weekend baking, or any moment when only a seriously indulgent brownie will do.

Ingredients

For the Brownies

  • 150 grams dark chocolate
  • 150 grams butter
  • 4 large eggs
  • 150 grams brown sugar
  • 150 grams flour
  • 50 grams baking cocoa

For the Egg-Free Cookie Dough Topping

  • 100 grams soft butter
  • 100 grams brown sugar
  • 30 grams sugar
  • 1 pinch salt
  • 120 grams flour
  • 2 tablespoons milk
  • 50 grams dark chocolate, chopped into small pieces

Instructions

  • Preheat the oven to 170°C using top and bottom heat. Line a square baking pan with baking paper. For the brownie base, slowly melt the butter and dark chocolate together in a heatproof bowl over a hot water bath. Stir until smooth, then let the mixture cool slightly.
  • In a mixing bowl, beat the eggs with the brown sugar until the mixture looks slightly frothy. Add the cooled chocolate-butter mixture, then stir in the flour and baking cocoa until combined. Spread the brownie batter evenly into the prepared pan and bake for about 35 minutes. Let the brownies cool completely before adding the topping.
  • While the brownies are baking and cooling, prepare the chocolate chip cookie dough topping. Mix the soft butter with the brown sugar and sugar until creamy. Add the salt, flour, and milk, then mix briefly until a soft dough forms. Fold in the chopped dark chocolate pieces.
  • If the cookie dough is too soft to spread, chill it in the refrigerator for about 15 minutes. Spread the cookie dough evenly over the cooled brownies. For cleaner slices, chill the finished cookie dough brownies again before cutting them into pieces.

Tips

Make sure the brownie layer is fully cooled before spreading the cookie dough on top. If the brownies are still warm, the topping may soften too much and become difficult to slice neatly. For an extra generous dessert, you can increase the amount of cookie dough topping.
