Ingredients

  • 8 ounces dates Medjool dates work well; Deglet Noor dates can also be used
  • 1/3 cup macadamia nuts dry roasted
  • 1/3 cup coconut flakes unsweetened
  • 1/4 cup cocoa powder unsweetened
  • 1/8 cup coconut flakes toasted and crushed small, for coating

Instructions

  • Place the dates in a food processor and process until they are chopped into small, sticky pieces.
  • Remove the dates from the processor and wipe out the bowl if needed.
  • Add the macadamia nuts and unsweetened coconut flakes to the food processor.
  • Pulse until the nuts and coconut are chopped into small pieces.
  • Add the chopped dates back to the processor along with the cocoa powder.
  • Pulse until the cocoa powder is fully mixed into the date mixture.
  • Transfer the mixture to a bowl.
  • If the mixture is not completely combined, knead it a few times in the bowl.
  • With lightly greased hands, roll the mixture into 1-inch balls.
  • Toss the rolled balls in toasted coconut flakes to lightly coat the outside.
  • Roll each ball gently between your hands to help the coconut stick.
  • Store in an airtight container until ready to eat.
