Ingredients

  • 12 figs
  • 2 tablespoons dark maple syrup
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • 1 tablespoon muscovado sugar
  • 2 teaspoons ground cinnamon
  • 2 cinnamon sticks broken up
  • 1 tablespoon pistachios

Instructions

  • Preheat the oven to 200C, 180C fan, or gas mark 6.
  • Cut four of the figs in half. Cut a deep cross into the top of the remaining eight figs, then gently squeeze the base of each one so they open slightly. Place all the figs into an ovenproof roasting dish.
  • In a separate bowl, mix the maple syrup, orange juice, orange zest, muscovado sugar, ground cinnamon, broken cinnamon sticks, and pistachios. Pour the mixture over the figs and carefully turn the fruit so it is coated in the glaze.
  • Nestle the cinnamon sticks under and around the figs, then roast for 15 minutes, until the fruit is soft and the glaze is bubbling and fragrant.
  • To serve, place 2 whole figs and 2 fig halves on each plate. Spoon the warm syrup from the roasting dish over the figs and finish with the roasted pistachios.
