Place the edible blossoms into a silicone ice cube tray. Add water until each well is about one-third full, then freeze until solid. Once the first layer is frozen, add more water until the wells are nearly filled and freeze again. This two-step process helps suspend the flowers inside the ice instead of letting them float to the top.

Ingredients

  • 2 ounces Chopin vodka
  • ¾ ounce Saint Germain
  • ¼ ounce Salers Aperitif
  • ¼ ounce Aperol
  • ½ ounce lime juice
  • splash ginger beer

Instructions

  • Add the vodka, Saint Germain, Salers Aperitif, Aperol, and lime juice to a cocktail shaker with plain ice. Shake well, then strain into a glass over flower ice cubes. Top with a splash of ginger beer and serve immediately.

To make flower ice cubes

  • Place edible pansies, green buttons, or other confirmed edible flowers into a silicone ice mold. Add cooled distilled water partway, freeze until solid, then add more water and freeze again. This helps keep the flowers suspended inside the cubes.

Notes

For the clearest ice cubes, use distilled water that has been boiled and cooled to room temperature before freezing.
