Healthy Weekly Meal Plan 3.11.17 featuring Shaved Asparagus and Pesto Pizza, One Pot Salsa Verde Chicken Pasta, Cheesy Quinoa and Bacon Casserole, Guinness Corned Beef Sliders, Greek Quiche with Whole Wheat Crust, and more easy dinner ideas for the week.

Hello everyone!

Happy Saturday! This weekend is packed with events, so I was up early this morning getting organized and trying to prepare for the busy days ahead. There is only one more full week of school before Spring Break, and while I am not completely ready for it, I am working on planning something fun for my girls. A good weekly meal plan always helps when life feels full, especially when the calendar is crowded and dinner still needs to happen.

This week also includes my first-ever InstaMeet on Sunday. It is a simple get-together where people who know each other through Instagram can meet in person, connect, and enjoy a fun evening together. I am looking forward to spending time with local friends and meeting new people. If you are in Madison, come out and join us!

Because there is so much going on, I will be leaning heavily on this Healthy Weekly Meal Plan. Having dinners mapped out in advance makes the week feel more manageable, and it also makes grocery shopping easier. This menu has a nice mix of comforting, flavorful, and family-friendly meals, from a creamy one-pot pasta to a fresh asparagus pizza and a hearty quinoa casserole.

Any week that begins with One Pot Salsa Verde Chicken Pasta is a great week in my book. It is the kind of dinner that feels cozy, satisfying, and practical for a Monday night. The rest of the meal plan has plenty to look forward to as well, including a pizza topped with pesto and thinly shaved asparagus, a cheesy casserole, festive sliders for St. Patrick’s Day, and a wholesome quiche to finish the workweek.

I will be back on Monday with something warm and comforting, which feels right because snow is expected here in Wisconsin. Spring, where are you? Until then, I hope this weekly dinner plan gives you helpful inspiration for your own kitchen.

Monday

One Pot Salsa Verde Chicken Pasta from Spoonful of Flavor.

This one-pot pasta is a smart way to start the week because it keeps dinner simple while still offering big flavor. A one-pot meal is especially helpful on busy Mondays, when easy cleanup can make the evening feel much less stressful. Salsa verde, lime, chicken, and pasta come together for a creamy, comforting dish that is perfect for a weeknight family dinner.

Tuesday

Shaved Asparagus and Pesto Pizza from me. The image of the pizza is above, and this one is seriously delicious. Pesto on pizza adds such a fresh, savory flavor, and the shaved asparagus makes it feel light and seasonal. To get the thin ribbons of asparagus, simply use a vegetable peeler. It is an easy technique, and it gives the pizza a beautiful texture. If you are looking for a weeknight pizza that feels a little different but is still approachable, I hope you try this recipe.

Wednesday

Cheesy Quinoa and Bacon Casserole from Lauren Kelly Nutrition.

Midweek calls for something satisfying, and this cheesy quinoa and bacon casserole fits right in. Quinoa adds heartiness, while cheese and bacon bring the comfort-food flavor that makes a casserole so appealing. It is a great option when you want a baked dinner that feels cozy and filling without being complicated.

Thursday

Guinness Corned Beef Sliders from Flavor the Moments. This is a great recipe for St. Patrick’s Day and a fun way to serve corned beef in a smaller, shareable format. Sliders are always a good choice for a casual dinner, and they work well when you want something festive without making the meal feel too formal.

Prep Ahead: The corned beef may be made in advance and reheated just before assembling the sliders.

Friday

Greek Quiche with Whole Wheat Crust from greens & chocolate.

A quiche is a lovely way to end the workweek because it can be served for dinner, brunch, or even enjoyed as leftovers. This Greek-inspired version with a whole wheat crust brings a fresh and wholesome option to the meal plan. It is a practical Friday recipe, especially if you want something lighter than takeout but still flavorful and satisfying.

Prep Ahead: You can make the crust in advance.

This Healthy Weekly Meal Plan 3.11.17 is designed to make the week easier with a variety of approachable recipes, including one-pot pasta, homemade pizza, a comforting casserole, holiday-ready sliders, and a make-ahead-friendly quiche. I hope it helps you plan your dinners, save time, and enjoy a delicious week of meals.
