How to Make This Rich Single Layer Rustic Chocolate Cake

Directions

  1. Preheat the oven to 320 degrees F or 160 degrees C. Make sure the bottom and sides of a 9-inch springform pan fit together securely, and close the latch tightly.
  2. Wrap foil under and around the outside of the springform pan, pressing it snugly against the bottom and sides. Spray the inside of the pan with cooking spray or baking spray. Line only the bottom with parchment paper, then spray the parchment as well. Line a rimmed baking sheet with foil and set it aside.
  3. Place the chopped chocolate in a heatproof bowl. Pour the boiled water over the chocolate and stir until the chocolate is completely melted and smooth.
  4. Add the 1/2 cup sugar and the additional 2 tablespoons sugar. Stir well until combined.
  5. Add the vanilla extract and vegetable oil, then stir again until the mixture is smooth.
  6. In a separate bowl, sift the flour with the baking powder and salt.
  7. Add the flour mixture to the chocolate mixture. Stir gently until the dry ingredients are fully incorporated. Scrape down into the bowl as needed, but try not to overmix. The batter will be thin and pourable.
  8. Pour the batter into the prepared springform pan. Place the pan directly on the lined baking sheet.
