Before You Begin
For the best texture, thaw the frozen hash browns before mixing them into the casserole and drain away any excess moisture. This helps prevent the finished dish from becoming watery. Let the cooked beef cool slightly before combining it with the creamy ingredients so the cheese does not begin melting too early.
Use 80/20 ground beef if possible. The little bit of extra fat adds richness and flavor to the casserole. Fresh onion and garlic give the best taste, and Worcestershire sauce adds a deeper savory note that helps balance the creamy sauce. If you have time, shred your own cheese because it usually melts more smoothly than pre-shredded cheese.
Hamburger Hashbrown Casserole Ingredients + Key Notes
- Ground Beef: 80/20 ground beef works well because it brings plenty of flavor to the dish.
- Onion: Use yellow or white onion. Fresh onion gives better flavor than onion powder.
- Garlic: Fresh minced garlic is best. Garlic powder can be used in a pinch.
- Salt + Black Pepper: These simple seasonings bring out the flavor of the beef and sauce.
- Hash Browns: Shredded frozen hash browns are ideal. Thaw them before adding them to the casserole.
- Cream of Mushroom Soup: This adds creaminess and savory flavor. Cream of chicken or cream of celery can also be used.
- Sour Cream: Full-fat sour cream gives the casserole a richer texture and flavor.
- Milk: Whole milk is preferred, but any milk will work.
- Mozzarella Cheese + Sharp Cheddar Cheese: Mozzarella adds meltiness, while cheddar adds bold flavor.
- Worcestershire Sauce: Do not skip it; it adds depth and makes the beef mixture taste even better.
- Frozen Peas and Carrots: Thaw and drain them well before using. A 12-ounce bag is the right amount for this recipe.
Pro Tips for Perfect Results
Reserve cheese for the top: Mixing some cheese into the casserole makes it creamy, while saving the rest for the top creates that golden, melty finish.
Add crunch if you like: For extra texture, sprinkle crushed Ritz crackers or crispy fried onions over the top before baking.
Let it rest: Allow the casserole to cool for 10 to 15 minutes after baking. It will slice more neatly and hold together better.
Customize the vegetables: Swap the peas and carrots for corn, mixed vegetables, or diced bell peppers if you prefer.
How to Make Hamburger Hashbrown Casserole Recipe
This easy hamburger hashbrown casserole comes together with simple steps.
First, brown the ground beef with onion, garlic, salt, and pepper. Drain off the excess fat and let the mixture cool slightly. In a large bowl, combine the beef with thawed hash browns, cream of mushroom soup, sour cream, milk, part of the mozzarella, part of the cheddar, thawed peas and carrots, and Worcestershire sauce.
Spread the mixture into a prepared 9×13-inch baking dish and bake until hot, bubbly, and golden. Add the remaining cheese on top, return the casserole to the oven, and bake just until the cheese is melted. Garnish with parsley if desired and serve warm.

Frequently Asked Questions
Can I use fresh potatoes instead of frozen hash browns?
Yes. Grate the potatoes and pat them dry with paper towels before adding them. Fresh potatoes may release more moisture, so the casserole may need a little extra baking time.
Can I substitute cream of mushroom soup?
Yes. Cream of chicken or cream of celery soup both work well, though each one will change the flavor slightly.
Can I make this with ground turkey or chicken?
Yes. Ground turkey or ground chicken can be used as leaner options. Add a small drizzle of olive oil while browning because they contain less fat than beef.
What can I serve with this casserole?
This casserole is filling enough to serve as a complete meal, but it also goes nicely with a crisp salad, rolls, biscuits, or a simple vegetable side.
