This Blackstone Taco and Veggie Meal Prep is an easy griddle recipe designed to cook everything at one time and turn it into four simple dinners for the week. It is flavorful, flexible, and perfect for busy nights when you want a meal ready without starting from scratch.
For this Blackstone meal prep, I used two kinds of potatoes because our house is split: some of us prefer sweet potatoes, while others love classic white potatoes. Cooking both on the griddle at the same time keeps everyone happy and gives you more options when building meals later.
I made this batch with ground turkey, but ground chicken or ground beef will work just as well. The taco seasoning gives the meat plenty of flavor, and the sliced sweet mini peppers add color, sweetness, and a fresh veggie element that works in salads, bowls, and quesadillas.
The sweet mini peppers might be my favorite part of this Blackstone taco meal prep. They cook quickly on the flat top, stay slightly sweet, and pair perfectly with the seasoned meat and potatoes.

How to Make Blackstone Taco and Veggie Meal Prep
Start by preheating your Blackstone griddle or flat top grill to medium heat. Add a little cooking oil to the surface. Place the diced sweet potatoes on one side of the griddle and the diced Russet potatoes on the other side, keeping them separate so you can use them in different meals later.

Season both kinds of potatoes with kosher salt and pepper. Add a splash of water to each pile, then cover the potatoes with a melting dome or lid. I used two smaller melting domes so each type of potato could steam and soften evenly.

Let the potatoes cook for 7 to 8 minutes. During that time, remove the domes a few times to stir the potatoes with spatulas. Add a little more water as needed before covering them again. This helps the potatoes become tender while still getting that great griddle texture.

Once the potatoes have started to soften, move them to the edges of the griddle. Keep the sweet potatoes and white potatoes separate if you want more variety for your meals throughout the week.

Add a little more cooking oil to the center of the griddle. Add 3 pounds of ground turkey, chicken, or beef, then season the meat with taco seasoning. I used taco seasoning packets and added Blackstone Tequila Lime seasoning for extra flavor. Add the sliced sweet mini peppers to the griddle as well.

Cook the meat, peppers, and potatoes for another 7 to 8 minutes, stirring everything a few times. Add about 1/4 cup of water to the ground meat halfway through cooking to help the seasoning coat the meat evenly. Taste and add more taco seasoning, kosher salt, or pepper if needed.

Pack Up Your Blackstone Taco and Veggie Meal Prep in Containers to Use Throughout the Week
When everything is cooked, pack the taco meat, sweet peppers, sweet potatoes, and Russet potatoes into containers with lids. You can portion them separately or combine the ingredients based on how you plan to use them. This makes it easy to put together fast lunches and dinners without cooking a full meal every night.

Sweet Potato Taco Salads
For an easy taco salad, start with a Taco Ranch salad kit. I used Taylor Farms. Add cooked sweet potatoes, taco meat, and sweet peppers, then finish the salad with the dressing and toppings that come with the kit. It is simple, filling, and full of taco flavor.

Taco and Sweet Pepper Quesadillas
To make quesadillas, preheat your Blackstone to medium low and add a little cooking oil. Place a tortilla on the griddle, then add cheese, taco meat, sweet peppers, more cheese, and another tortilla on top.
Cook the quesadilla until golden brown, flipping a few times so both sides crisp evenly and the cheese melts. This is a great way to use the taco meat and peppers for a quick, cheesy dinner.

The Viral Sweet Potato Cottage Cheese Bowls
For a sweet potato cottage cheese bowl, use the sweet potatoes, taco meat, and sweet peppers from this meal prep. Add cottage cheese, avocado, and a drizzle of hot honey. It is a flavorful mix of creamy, sweet, spicy, and savory ingredients.

Taco Loaded Potato Bowls
For taco loaded potato bowls, start with a layer of sweet potatoes or white potatoes. Add taco meat and sweet peppers, then finish with your favorite toppings. Lettuce, cheese, sour cream, hot sauce, and pickled red onions all work well.

- Cooking oil of choice
- 2 to 4 sweet potatoes, depending on size diced, skin on
- 2 to 4 Russet potatoes, depending on size diced, skin on
- Kosher salt and pepper
- 3 pounds ground turkey, chicken, or beef
- Taco seasoning I used 3 taco seasoning packets plus Blackstone Tequila Lime seasoning
- 1 pound mini sweet peppers sliced

This recipe was made on a 36-inch Blackstone griddle. If you are using a smaller griddle, adjust the amounts or cook in two batches. Preheat the griddle to medium heat. Add cooking oil, then place the sweet potatoes on one side and the Russet potatoes on the other. Season with kosher salt and pepper, mix with spatulas, add water to each side, and cover with a melting dome or lid.

Cook the potatoes for 7 to 8 minutes under the domes. Remove the domes a few times to stir, adding more water before covering again if needed.

Set the melting domes aside and move the potatoes to the edges of the griddle, keeping the two kinds separate.

Season the ground meat with taco seasoning. Add additional seasoning to the peppers and potatoes if desired.
