If the crumbs are too large, the truffles will still taste good, but the texture will not be quite as creamy.

After a little trial and error, I found that using a full 8-ounce package of cream cheese made the mixture too soft because a package of mint Oreos contains fewer cookies than a regular package. Reducing the cream cheese to 6 ounces gives the truffles a better texture and makes them easier to roll, chill, dip, and serve. Chilling the mixture before shaping also helps keep the truffles firm enough to handle.

Ingredients

  • 15 oz box Cool Mint Oreos
  • 6 oz cream cheese softened
  • 16 ounces semi-sweet chocolate chips about 2 cups
  • 1 Tbsp shortening
  • ¼ cup mint chips or green candy melts optional

Instructions

  • Crush the Oreos in a food processor or blender until they are very finely ground.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Add the Oreo crumbs and mix until fully combined. Cover the bowl and chill the mixture for about 30 minutes.
  • Roll the chilled mixture into 1-inch balls and place them on a waxed paper-lined cookie sheet. Chill the truffles while you prepare the chocolate coating.
  • Melt the shortening in a glass bowl in the microwave. Add the chocolate chips and microwave at 50% power, stirring every 30 seconds, until the chocolate is smooth.
  • Dip each truffle into the melted chocolate using a fork, allowing the excess chocolate to drip off. Use a toothpick to gently slide the truffle from the fork onto waxed paper. Let the coating set until firm.

Notes

  • You can substitute melting chocolate, white chocolate, or almond bark for the chocolate chips. If you do, omit the shortening.
  • If you use chocolate chips, do not replace the shortening with butter or margarine. Butter and margarine contain water, which can cause the chocolate to seize and harden.
  • Keep the Oreo mixture chilled before dipping. Firmer truffles are easier to coat and hold their shape better.
