Hello, my name is Rachelle, and I’m the baker behind Gluten Free Baking By Rachelle. I was diagnosed with Celiac disease in 2009, and gluten free living quickly became part of everyday life for our family. My husband is gluten intolerant, and two of our children also need to avoid gluten, so creating safe, delicious gluten free recipes has become both a necessity and a passion.
I have loved cooking and baking since I was a little girl. At the time, I used to tell my mother that I probably would not benefit much from learning how to cook and bake. She assured me that one day I would feel differently, and she was absolutely right. What began as a childhood lesson eventually became something I rely on every day, especially as I learned how to bake without wheat, gluten, dairy, and eggs.
When I first received my Celiac diagnosis, I felt completely overwhelmed. Gluten free baking seemed confusing, and many of the ingredients felt unfamiliar. I had to learn new flours, new textures, new methods, and a new way of thinking about recipes. After plenty of frustration, testing, and patience, I slowly found my way into the world of gluten free baking. To my surprise, it became just as satisfying as the baking I had always known.
Just when I felt confident with gluten free recipes, I developed additional allergies to dairy and eggs and had to remove both from my diet. That brought another learning curve, but it also pushed me to become more creative. My family has always been honest with me about what works and what does not. They are not shy about saying, “I don’t like that,” and although it can be hard to hear, their feedback has helped me improve my recipes and make them better, softer, sweeter, and more enjoyable.

Goodness, where do I begin with this pie? Lately, I have been craving classic desserts like cream pies, donuts, cobblers, and muffins. With my current dietary restrictions, I cannot have dairy, wheat, or eggs, so recreating those familiar desserts takes a little creativity. This gluten free vegan coconut cream pie was created to taste like a traditional coconut cream pie while still being completely gluten free, dairy free, and egg free. The filling is creamy, the coconut flavor is rich, and the dessert feels comforting and familiar. My family went absolutely wild for it. In fact, our youngest daughter asked if I could make this pie for her birthday in November, which is one of the best compliments I could receive. My husband was also a little disappointed when he thought I had not saved him a second piece.
