Gluten-Free Baking Recipes by Rachelle

Hello, my name is Rachelle, and I’m the baker behind Gluten Free Baking By Rachelle. I was diagnosed with Celiac disease in 2009, and gluten free living quickly became part of everyday life for our family. My husband is gluten intolerant, and two of our children also need to avoid gluten, so creating safe, delicious gluten free recipes has become both a necessity and a passion.

I have loved cooking and baking since I was a little girl. At the time, I used to tell my mother that I probably would not benefit much from learning how to cook and bake. She assured me that one day I would feel differently, and she was absolutely right. What began as a childhood lesson eventually became something I rely on every day, especially as I learned how to bake without wheat, gluten, dairy, and eggs.

When I first received my Celiac diagnosis, I felt completely overwhelmed. Gluten free baking seemed confusing, and many of the ingredients felt unfamiliar. I had to learn new flours, new textures, new methods, and a new way of thinking about recipes. After plenty of frustration, testing, and patience, I slowly found my way into the world of gluten free baking. To my surprise, it became just as satisfying as the baking I had always known.

Just when I felt confident with gluten free recipes, I developed additional allergies to dairy and eggs and had to remove both from my diet. That brought another learning curve, but it also pushed me to become more creative. My family has always been honest with me about what works and what does not. They are not shy about saying, “I don’t like that,” and although it can be hard to hear, their feedback has helped me improve my recipes and make them better, softer, sweeter, and more enjoyable.

All of my recipes begin as 100% gluten free, and over time many have also become dairy free and egg free. Today, I’m grateful to share a few favorite gluten free vegan baking recipes with you. Thank you to Sarah from Sarah Bakes Gluten Free Treats for welcoming me as a guest.

I’m excited to share five of my favorite gluten free recipes, starting with these sweet, comforting treats.

Gluten Free Vegan Apple Cinnamon Donuts with Maple Glaze

These gluten free vegan apple cinnamon donuts were such a hit that they disappeared almost as soon as they were made. I brought some to my neighbors, who loved them, and my kids enjoyed them so much that they nearly ate the entire batch. I saved one donut for my husband’s lunch, but it never made it into the lunch bag. It went straight to his tummy instead. That is always a good sign in our house. These donuts are soft, sweet, full of warm apple cinnamon flavor, and finished with a maple glaze that makes them feel extra special. I already know I will be making them again in many different flavors.

Gluten Free Vegan Coconut Cream Pie

Goodness, where do I begin with this pie? Lately, I have been craving classic desserts like cream pies, donuts, cobblers, and muffins. With my current dietary restrictions, I cannot have dairy, wheat, or eggs, so recreating those familiar desserts takes a little creativity. Thankfully, So Delicious Dairy Free products have helped make dairy free baking much easier for me.

This gluten free vegan coconut cream pie was created to taste like a traditional coconut cream pie while still being completely gluten free, dairy free, and egg free. The filling is creamy, the coconut flavor is rich, and the dessert feels comforting and familiar. My family went absolutely wild for it. In fact, our youngest daughter asked if I could make this pie for her birthday in November, which is one of the best compliments I could receive. My husband was also a little disappointed when he thought I had not saved him a second piece.

Gluten Free Vegan Blueberry Maple Muffins with a Streusel Topping

During the summer, we picked plenty of fresh fruit to freeze and use later. I love being able to use fruit we picked ourselves because I know where it came from and what is on it. Blueberries are especially wonderful in gluten free muffins because they add natural sweetness, moisture, and bright flavor. Muffins of almost any variety are a favorite in our home. They are easy to enjoy for breakfast, simple to pack in lunches, and perfect for a quick snack. These gluten free vegan blueberry maple muffins are topped with a sweet streusel that adds a lovely crumbly texture and makes them feel bakery-worthy.

Gluten Free Lemon Loaf

I love the light, lemony flavor of this gluten free lemon loaf. It is bright without being too heavy, and it makes a lovely treat with breakfast, brunch, or an afternoon cup of tea. If you enjoy lemon as much as I do, you can add lemon zest to the recipe to make the flavor even more vibrant. The fresh citrus taste makes this loaf feel cheerful and refreshing, and it is one of those simple gluten free baked goods that never lasts long in our kitchen.

Gluten Free Blueberry Strawberry Mini Pies

Pie is a family favorite, and these gluten free blueberry strawberry mini pies are absolutely delicious. The filling has a wonderful balance of sweet and tart fruit, and it pairs beautifully with a flaky gluten free crust. Because they are made as mini pies, they feel fun, personal, and just the right size for sharing. Of course, being mini also makes it tempting to have more than one, and I think that is part of their charm. The combination of blueberries and strawberries creates a colorful, flavorful dessert that is especially satisfying for anyone who misses traditional fruit pies.

Thank you for letting me share these gluten free baking favorites with you today. Living with Celiac disease, gluten intolerance, and additional food allergies can feel overwhelming at times, but it can also lead to wonderful discoveries in the kitchen. Gluten free, dairy free, and egg free baking may take practice, but it is completely possible to create desserts that taste comforting, familiar, and delicious.
