I realised I never published this Everton cake post, so here it is at last. Football cakes are endlessly versatile and I enjoy the challenge of making each one a little different. An Everton football cake is always popular in our house since Tara is increasingly becoming a dedicated Everton fan. I can already feel visits to Goodison Park in our near future.
One concern I always have when making a blue cake is the amount of colouring used. No one wants to eat a cake overloaded with artificial dyes. To reduce the taste and intensity of colour, I often apply a thin layer of blue over a base of white icing. Where possible I choose a paler shade of blue to keep the cake visually appealing while using less colouring overall.
I tend to make at least two-layer cakes now. Since I don’t bake as often as I used to, when I do make a cake I like it to be substantial both in size and in presentation. Single-tier cakes can feel a little dated in my kitchen these days; two layers give a better silhouette and more impact for birthdays and events.
